Noir de Blanc
The red Chardonnay, our Noir de Blanc (red from whites), is a red wine made from the base must of a white wine. Born alongside the Orange de Noir, the Merlot and Chardonnay varieties are harvested on the same day.
The grapes are gently pressed, separating their skins from the must, and the Merlot skins are combined with the Chardonnay must, creating the conditions for spontaneous fermentation. This wine does not undergo post-fermentation maceration since the skins are removed after alcoholic fermentation is complete.

Orange de Noir
The Orange de Noir (orange from reds) is an orange wine made from a blanc de noir of Merlot. Conceived to complement the “Noir de Blanc,” the Merlot and Chardonnay varieties are also harvested on the same day.
The musts are gently pressed, separating them from the original skins. The Chardonnay skins are combined with the Merlot must for co-fermentation and then macerated for 4 to 9 months depending on the vintage. Part of the wine is allocated to a solera of reused barrels, forming a veil that allows for biological aging. Each vintage benefits from a component of this magical history of the solera.

Chardo con Polvora
The Chardo con Pólvora is a wine made with the grapes from the second harvest pass in the plants of our Chardonnay. Selected clusters, maceration with their skins in the crushing, pressing before fermentation, and 20 months in barrel on their fine lees, practicing batonnage to keep them suspended.
“It is a high-end wine unpolished, unfiltered. Bottled just as we take it in the barrel room.”

Wild Merlot
Wild Merlot is the expression of an emblematic grape variety that we want to showcase in all its power. We invite you to drink it young, reactive, and lively, showing the strength of this historic grape. It is also encouraged to age it to enhance the silkiness of this traditional Bordeaux variety, which is not often worked on in Argentina.
This wine is the same that we will later age for 30 months in French oak barrels and then store for 2 or 3 years in the bottle. We thus show the natural base of La Pérgola de Agrelo, the most traditional wine of the house, naked.
It is a selection of plants from a section of the vineyard with a more complex Merlot.
The “little men” of the Merlot cluster that remained on the plant after the Flower Merlot harvest are harvested for this wine, adding extra power to the natural wisdom of the aging vineyard.
These are old plants with a good canopy volume that develop more layers of flavor and complexity. Fermentation with indigenous yeast, taking care not to over-extract or break the skins, seeking softness and delicate movements in winemaking. Keeping the skins as intact as possible allows us to have a post-fermentation period of between 2 and 3 weeks, giving it great drinkability as soon as it is uncorked.
